Halfway through the Easter Holidays!

It's been quite tough lately, the car broke down and died - the engine fell out!! It was two weeks after I'd started driving again, I'm devastated!! My foot surgery has taken longer to heal than we'd hoped as the stitches didn't dissolve so caused abscesses etc and now I have to walk everywhere!
We now have no car and are saving every penny we can for a new one! It may be some time.... Think I may have to look into other sources of income.

DIY panty liners

I've been wanting to do this for a while!! I hate the amount of waste we create in our every day lives so I'm looking at practical ways to reduce waste and expense.

I used the pattern from kamsnaps.com which appeared on Pinterest. I am trying new things from Pinterest every day, my husband wasn't so impressed with this one!!

I have hundreds of metres of Velcro so that's what I used. I used cotton top and bottom and a piece of towelling inside. It's for comfort, not for a heavy period. I have a coil so don't get those anymore :-)

My first sourdough loaf!

I've been feeding my sourdough starter for over a week, waiting for a day I can dedicate to making a loaf!!!

I followed these instructions, mixing wholemeal and white bread flour to start it off, now it's guzzling it's food like a toddler with chocolate cake and expanding massively every day!!! I reduced the amount I give everyday to half cup flour, quarter cup water to reduce the need to discard any.

Cure anything soup!

I feel rotten. I've had a cough and sore throat but been soldiering on, till today! I ache all over and feel exhausted. I made a flu remedy soup for a friend of mine earlier this week and made my own version today, for me. And it's lush!

Ingredients:
1 tbsp oil (I used sunflower)
1 whole chicken breast
1 chopped onion
4 cloves garlic, minced.
1 inch fresh garlic grated
1 stick celery finely chopped
2 carrots finely chopped
1 courgette finely chopped
Juice of one lemon
2 cups of white wine
1 pint chicken stock
Pinch turmeric
Pinch paprika or Cayenne
Sea salt and pepper to taste
1 nest noodles per person

Heat oil in a saucepan, add chopped vegetables, garlic and ginger.

Cook gently for a few minutes until veg start to soften, then add wine, lemon, chicken, stock and spices/seasonings. Simmer for 20 minutes.
Remove chicken and set to one side. At this point I put half the soup in a container for tomorrow and added one nest of noodles for today. Simmered for 4 minutes until noodles are cooked, but don't do that if you're cooking for two. Just add noodles and cook for two.
While noodles cook, shred the chicken and then add back to soup. Add more water if necessary.
Season to taste, serve and enjoy!
